A Very Veggie Valentine’s Day

HEYYY and Happy Valentine’s Day!

Maybe you already have your Valentine’s Day plans… or maybe you even planned them weeks or months ahead. But if you’re like me today, we’re getting creative because we didn’t make any elaborate plans. I like to think creativity thrives under some constraints (*wink wink*). With that said, I’m rolling with my last meatless meal post — read it here afterwards — and sharing some quick and easy vegetarian dishes you can make tonight to share with your loved one(s).

MAIN COURSES

My social media feed has been FILLED with plant-based chefs recently and I’m not complaining. I’ve been following fast fashion campaigner, Venetia La Manna, for years and earlier this week, discovered that her husband, Max, is an award-winning author and low-waste chef. So thank you, Max, for this first recipe that you can make in just FIFTEEN minutes!

SIDE DISHES

Another plant-based creator I’ve been following for a while is @veggiekins, or Remy Park. She creates gluten-free and vegan recipes with influences from her Asian heritage, and French and Brazilian family. She’s been making lots of mocktails — scroll to see one — but for now, here’s a nice vegetable side:

Another super quick and easy recipe! The ingredients include broccolini, a neutral oil, salt & pepper, everything bagel chili oil, garlic, and lemon (optional). Find the full recipe on her website here.

DRINKS

As promised from above, here a couple of Remy’s (@veggiekins) mocktail recipes. I think the froth from the Hibiscus Sour looks magical and can’t wait to try making it!
